Deconstructed Cabbage Rolls
This is one of my favorite fall meals. It is hearty and comforting and reminds me of cabbage rolls but without the carbs. It is loaded with cabbage and fresh herbs. Cabbage is a cruciferous veggie and has many health benefits.
If you eat rice, eat this with a bed of rice for a more traditional meal.

- Sauté onion and garlic, when soft add chopped cabbage and green beans.
- Pour in the tomatoes and add S & P and thyme to taste.
- Simmer for at least 1/2 hour, the longer the simmer the more tasty! I usually do an hour. ⠀⠀⠀⠀⠀⠀⠀
- Now for the meat version, I brown separately one package of grass fed ground beef. Once cooked I add it to the cabbage and tomato mix when it’s done.
- For a vegan version, cook one cup of lentils how you like and stir into the tomato and cabbage mix when it’s done.⠀⠀⠀⠀⠀
