Immune Boosting Ginger Turmeric Squash Soup

I love easy healthy recipes, especially when made with functional foods! Functional foods are foods that offer amazing healing benefits, not just nutrients! This soup is loaded with functional foods!

The soup uses squash and carrots, hello beta carotene (which converts to active vitamin A which is critical for our immune systems to be operating at its best), fiber, vitamin C, and more!

TIP- Don’t peel your carrots! The fiber in the skin is excellent in detoxing excess estrogen!

I also use garlic and onion for their prebiotics and immune-boosting properties. Prebiotics are entirely different from probiotics! Prebiotics feed the good bacteria in our guts! When these bacteria are flourishing, we are healthier!

You will also find fresh ginger and turmeric in this soup; both are warming and soothe any inflammation we are experiencing when sick or fighting an illness.

TIP- use homemade bone broth, it’s immune-supportive as it is loaded with collagen, amino acids, vitamins and minerals, and electrolytes, all are essential for optimal health and they help to heal the gut!

I hope you try this soup, it simple and nourishing. When it comes to food, I prefer simple and foods with "benefits". Not to mention, it is the easiest soup to make!

Instructions

  1. Heat oven to 425.
  2. Wash your squash and carrots. Cut the squash in half and scoop out seeds. Place the squash skin side up and carrots on a baking pan.
  3. Add onion, and garlic to pan.
  4. Bake everything until squash and carrots are soft.
  5. Scoop cooked squash, carrots, onion, garlic (remove skin) into a blender, add in fresh ginger, turmeric and broth. Blend until smooth.
  6. Serve in bowls, topped with sautéed mushrooms, raw pumpkin seeds, hemp hearts, microgreens, and more!
